Many recipes call for adding ground pork so your meatloaf doesn’t end up dry and bland. No need to when you’re using wagyu! Our recipe for this supreme comfort food is all beef, all the way. Plus, using half breadcrumbs and half oatmeal gives it a superior texture and added health benefits.
Ingredients
- 3 lbs Bronson Beef Co. ground beef
- 3⁄4 cups of bread crumbs*
- 3⁄4 cups instant, unflavoured oatmeal*
- 1 small red or yellow or orange pepper, diced
- 1 small sweet onion, diced
- 2 large eggs
- 2 tbsp Worcestershire sauce
- 1 tbsp minced garlic
- 1 tbsp Montreal steak spice
- ketchup, BBQ sauce, or chili sauce
* If oatmeal’s not your thing it can be substituted with bread crumbs. If oatmeal is totally your thing, you can substitute the bread crumbs with additional oatmeal.
Directions
- Add everything except the eggs and ketchup to a big bowl and mix it all together well with your hands.
- Add eggs and continue mixing until everything has come together fully, then let it rest for 5 minutes.
- Form into two loaves of equal size, and place each inside very lightly greased loaf pans. Be sure to leave an inch or two of space between the loaf and pan rim.
- Coat the top of each loaf with ketchup or chili sauce to your taste.
- Bake uncovered at 325° until a meat thermometer reads 165°C at the center of the loaf (a bit over an hour, usually).
- Remove from oven and let stand for 5 minutes to collect its juices.
Serving Suggestions
Gravy. Mashed potatoes. Roasted carrots or parsnips. Corn. A big loaf of crusty bread.
